Manchego Entrepinares is the most popular Spanish hard cheese made from sheep’s milk. It is produced only in the Castilla-La Mancha region, the homeland of Don Quixote.
The cheese is made from three types of pasteurized milk: cow’s milk ❯ 50%, sheep’s milk ❯ 20%, and goat’s milk ❯ 15%. It is very flavorful and pairs wonderfully with red wine.
