This pork liver pâté is made with the addition of wine. Pedro Ximénez, or PX, is a white grape variety widely cultivated in the Spanish regions of Andalusia, Extremadura, and Valencia. Pedro Ximénez is a key component of the world-famous Spanish fortified wines, sherry and Málaga.
